actually the only difference between them its 200mhz , so its not worth it,also you can overclock ryzen 1600 to get the same frequency
i got the 1600 for very nice price, but im starting to contemplate whether i should send it back and pay an extra 50£ to get an upgrade. is it worth that much of a price difference?
I have a 2700x and I believe the only difference with the 2000 series is that it runs higher frequencies at lower voltage, which in return can run your cpu at lower temps. Which is good in the long run but I think its only useful for overclocking really.

edt. but if you planning to run it on basic clock, dont bother and get 1.6k, youll not see the difference.
iirc 1600 had a better stock cooler, 2600 has some features that 1600 didnt have, like store mi if you have a b450 board. I dont use it since i have most used stuff on my ssd.
if the price difference is 50€ then 1600 is probably a better choice, a few mhz here and there will give you like 10 fps more lol. but i feel weird buying old gen tech. so I would go for 2600 anyway xD
Get the 2600 it got way better IPC and many more fps ingame
