Witcher 3 is the obvious one. I really enjoyed the dragon quest series

Titan Quest: The exactly same genre like Diablo, the world is just more bright and beatiful, going trought ancient mythical greece and china is a great experience. I always liked its own character building system, you can build crazy things there, this game is still updated since 2006 with great expansion updates, the playing time is enormously long, COOP multiplayer is great too.
Stalker Call of Chernobyl : A modpack for the best RPG FPS ever made, going trough the red forest or ruins of prypiat, gathering enought money and equipment needed for the journey under chernobyl power plant sarcophagus is an unforgettable unique experience. With the right addons avaible on the mod pages, its a masterpiece.
-Baldur's Gate (even if i know that Diablo was better but i had only B's Gate as a child )
-Oblivion (never played morrowind though. But oblivion>skyrim for me)
-Kingdom Come!!!! Love it
Witcher 3 is the best one for sure. A honorable mention Gothic 1&2, extremely good RPGs with good plot and atmosphere

Modern days action rpgs I'd go with Witcher 3 or the Soulsborne series
Kingdoms of Amalur : Reckoning! This game was a hidden gem, albeit a bit old now but still a really well polished RPG that was so underrated. The company went bust when creating their MMORPG version of the game, nicknamed Project Copernicus. Vampire: The Masquerade – Bloodlines
Probably not the best (people have already mentioned most other good rpg already) but it belongs on any "best RPGs of all time" list
Oblivion, Witcher 3, Morrowind, KC:D, KOTOR 1+2.
There are other great RPGs of course, but this is the S tier list.
Kotor 1-2 was ahead of its time and still imo one of the best rpgs
