A nice PDO Parmiggiano-Reggiano or mozzarella di buffala (real one, produced in Campania, Italy, not that plastic crap you will usually find in supermarkets). Also a good soft and ripe Camembert from Normandy, France.

I do not really like cheese, but swedish Västerbottensost is quite good and Mozarella because it doesn't taste that much.
The other day I ate gorgonzola cheese with nuts and apricot and It was DELICIOUS
