It depends on your native language and how similar it is to your target language.
Languages based on Latin and Ancient Greek for example are not that hard for people who have a native language also based on Latin and Ancient Greek, but for a Japanese for example, it can be much harder.

If you know only English then try Dutch or Spanish. German and Scandinavian languages will be a little harder, then French.
spanish is easy if you know english, also probably the most useful if you live in NA

For me Dutch and every Scandinavian language, i.e. Danish, Swedish and Norwegian. Finnish is a whole different story.
English isn't an easy language to learn lmfao

For me, as a Bosnian, Russian and other slav langauges are really easy to learn.
But for a French, Italian or Spanish (I think).
So yeah, you can't define which langauge is easiest.
IDK the easier, but for the hardest, I think Portuguese is one of the hardest of the western languages. Many people that have Portuguese as native language don't know how to speak properly. It has many words to say the same thing, useless verbal tenses, etc. It's similar to Italian, Spanish so I think it's easy to learn the basics, but very hard to master, even to natives
