I agree on some level, but the tradition is from when people were starving and had no other options than eating wild animals. Still tho, I see it as an unethical to eat something like dogs, crocodiles, wolf, cats, bats etc. Especially when you don't know if they are sick and those markets tend to get dirty. Those animals should be slaughtered in a slaughterhouse.
Same goes for cows, hens, roosters, pigs and other farm animals, they should be tested and killed in a slaughterhouse. I have never been a big fan of killing them right there, with poor hygienic surroundings and shitty tools.
My grandparents have a farm and they sell their meat cattle for the trusted slaughterhouse and once my grand-dad said: "It's so stupid to make the animal suffer so much, think about yourself in that animal's position, would you like to suffer as much?" When I said that some people boil some dogs or others alive.
(basically, they know the owner very well and know that he treats animals well)
