Sennheiser's are godlike. I have the IE40 and they are amazing, very detailed, good bass definition and great soundstage. I'd recommend them for sure if audio quality is a big concern. If you're thinking that maybe earbuds are worse than headphones because of the size get that out of your head, I have an AKG K240MKII and a Sennheiser PC37X and the IE40 beats them both. What I usually do is search for 'best earphone/headphone under $XXX' and then pick something from a reliable brand. The AT M50X got a lot of praise back in the days, I never used them, but they are very famous among bass heavy enthusiasts. One headphone I used and loved was the B&W P7, but they need and amp for optimal performance. If I were you, I'd very likely pick a Sennheiser on whatever budget I had.

You should definitely look at the Shure SE215-CL (earbuds)
They are about half your budget but without doubt way better than a $200 headset

Look into the beyerdynamics DT 990, DT 880 or DT 770 depending if you like semi-open, open or closed headsets. I have the 990 myself and they're amazing.

dont get m50x they have bad soundstage. everything sounds super close.
dt 770 are good but u dont get microphone. just add an attachable. they are cheap second hand.
personally i use the beyerdynamic studio custom (not the pro variant) who are basically dt 770 with a flatter sound curvature, removable cable so i can fit a vmoda boompro, adjustable bass which is nice for music and they sound great.
focus on wide soundstage and imaging. cloud 2 are rebranded takstar 88s i think, thats why theyre so good. they beat 100 euro headsets.
check up reviews. open-back ehadphones are always gonan be better for gaming. the ideal are the dt 990 but you will hear everyting else in your room. i like it but i dont want to go to lans with open back xd

Best priceworthy sound quality on over ears:
1) Sennheiser
2) Teufel
3) Bose
(no particular order)
I wouldn't recommend Earbuds atm as they are heavily overpriced and will be way better in 1-2 years but keep your eye on those brands. The sound quality of the Sennheiser Earbuds is excellent but other parts lack certain things that will surely be fixed in the upcoming releases.
But my suggestion for you: check out the b-stock or current sales of the suggested brands above.
