Well, going blunt on this there's a reason why they sold so damn many, did you think? Their main strength was songwriting, on top of their top notch performance they were meant to be famous. But the thing that made them stand out were those little innovative decisions in their writing, as to add another note to a common chord and change the sound completely, or some rhythmic decisions that would serve as hooks. Their most obvious weakness has served them as the biggest advantage, they didn't know theory and had to literally invent chords to enrich their music and while at it, they'd let themselves go and you know how far they went.

Well of course, but The Beatles are a bad example because they are pretty good. There are many big bands like Queen, Aerosmith, Van Halen etc. who are actually complete garbage. Not to mention 2000's popular music which all is rock bottom and the worst music ever produced in the history of mankind, period.

But the main question is "Does music have to be an art?".
I say no to that, music should be more of a hobby than an art. Listening to it or singing and playing it should be done out of joy, whatever the genre is. I like lots of genres and hate lots of genres but anyone can listen to whatever they want if it's not morally disruptive(might be from lyrics or treatment of/from artists).

i think beatles is the most influential band because they're the first of using recording technology cmiiw. i mean look at his album Sgt Pepper, it's very experimental and weird. i mean, bass panning right, drum left, etc. also, back then abbey road studio is very advanced and the most popular studio because the beatles, and after that many popular band also recorded in abbey road studio like pink floyd.
i also think the arrangement of beatles are very catchy and influential too, i mean many people studied the beatles arrangement and etc.

about jazz recording like john coltrane and other jazz composer, i think it's just more like different music and you can't compare it with pop/rock music. i mean, jazz music is just not for every one and they're using complex chord and arrangement and sometimes it will make your brain hurt. example like john coltrane - giant steps, they're modulating like crazy and using all notes, i mean, i really like it because it's sounds good and unique, but i think not everyone like it, some people prefer catchy and simple chord. also jazz recording are using same technology like sgt pepper which is make jazz music sounds unique.
