I am about to make some nice borscht. is it okay to replace beef with lamb? I mean for stock and the meat. I have heard that it is not okay to use pork for stock, so this is why I am asking, wanting to make sure if the result can be called "borscht" or "borscht, but with lamb".

in romania we also have borscht and we use pork, beef and lamb depends what you have, little tip: boil the egg 8-10 minutes, the yolk will pour on the borscht and it makes the taste better.

i ate borsch in Romania, Moldova, Hungary, Bulgaria all of them were with eggs, i cook borsch with egg myself, you eat it how you want, it's just better with egg.

i believe u talk about cold borscht and not about hot borscht. We putting sometimes egg to cold borsch too, but not hot one.

Borsch = national Ukrainian dish chek some internet guides how to make it properly... in all cases you should add SOUR CREAM (during eating to your Borsch) + it's better to eat Borsch with SOFT BUNS with GARLIC. it is best combo. Borsch + Sour cream (just put 1 spoonful of sour cream into your plate before you start eating) + Soft buns with Garlic. you can use any kind of meat, but Beef legs are the best I guess. they became soft and tasty during cooking

Borsch is usually made from pork or beef. But lamb can also be used. And yes - it will be borsch. The main thing is to follow the rest of the recipe.
