I love visiting Spain, specifically Barcelona as well as Italy. Don't miss out on Copenhagen and Stockholm during the summer.
Denmark has all of that! The weather is pretty random tho, but in the summer it's usually quite nice, however heavy rain does happen.

You can start in Italy, maybe Florence then go up to Venice. Afterwards visit Vienna (consider going through Südtirol and then stopping at Salzburg & Hallstatt before if you are into "typically austrian" scenery or visit Triest instead on your way to Vienna), then go from there to Prague and afterwards to Budapest. You can sneak Bratislava in there as well if you want. Then, if you have time and want to, you can head south to maybe Croatia or Greece.
edit: If you want to stay in one country stick to Italy I would say. You have mountains & forest up north in Südtirol, great cities in the middle of the country such as Venice, Florence, Rome etc & more coastline than you can ask for.
Belgrade is probably one of the most beautiful cities in Europe.
I'd say it depends on when you are going.
You will find all the you are looking for in every EU nation, but if you in late June, in July or August I recommend staying to the Northern parts of Europe as otherwise it can get to hot for comfort. And if you go in mid June to early July then you'll find the days in Scandinavia hardly ends, there is something magical by summer nights so short you almost can miss them.
If you are coming to the UK, you must visit Slough. It's a beautiful place right next to Windsor Castle (where the Queen lives).

Poland is good, beautiful cities, cheap food and beer and lots of places to see. Prague is also nice but thers a lot of scammers praying on tourists so u gotta care who u talk to. Croatia is also good if you like going to the beach, waters crystal blue over there.

You can say you like food and architecture and weather, but you'll need to be more specific than that.
Also, interesting architecture you can find everywhere in Europe, it's called "the old world" for a reason.
Portugal/Spain is worth recommending for food and sunny/warm weather.
Greece also has both, but it's quite far from the UK.
Norway has amazing landscapes and food, and it'll be a little cooler in the summer. Sweden has even better food, but not the amazing coastal landscapes.
The Netherlands and Belgium are right off the coast and they are quite proud of their food and drink too. Though the weather isn't generally too good.
If you prefer warm weather, you can do a route from Belgium to France, to Spain to Portugal, back to Spain, Italy, and then back north.
Or if you prefer cold, you could go to Belgium, over the Netherlands to Denmark, to Sweden to the north, and then come back over the Norwegian coast.
I don't know, but Tuvalu is a nice place!

probably italy and spain, they both have alot of history and alot of things to visit, people are more open in mediterranean countries and everything is not that really expensive in comparation to other european countries like Switzerland.
Plus food is very good in both countries, people is important too, most people is friendly and has good vibes, in other countris people is way more closed.
Definitely visit a midterrainean country (I'd do Spain, Italy or Greece) if you're only visiting one country.
If you are backpacking a bit and have more time, I'd do France, Germany, Switzerland or Austria aswell. The alps are cool, but the big cities are just the same-ish all over the world.
Scandinavia is okay, but expensive. Norway has the most cool nature, but also omega expensive.
Stay away from Eastern EU.

i'd say try to go montenegro, kotor is fairly nice. enjoyed my 2 days there, will definitely go back. food is excellent. i'm not a nightclub guy, so can't comment on that

The good thing about EU, is everything close, you can visit one day some place in Netherlands, go to Antwerp, go to Bruxelas and return to Paris:D . Is different from USA, Russia or Brazil.

You already metioned Budapest but I still second it. I don't care for nightlife, but even I had fun time there, and if you are not complete moron its super safe place. There's awesome architecture, museums have English texts so you can understand stuff there. I especially suggest visiting House of Terror, fucking intense place. Food is cheap and in most places extremely well prepared. Avoid the tourist street though, its fucking nightmare.
