I like to make sandwiches when I have the materials.
Good bread, toasted on the inner side, soft on the outer. Honey mustard on one side, guac on the other. Lettuce, Caramelized Onions, Thin-Sliced Tomatoes for vegis. Honey ham and turkey for the meats.
Fantastic meal.

But in general there's one food I really like and it's kinda improvised. Reminds mostly of Spanish Paella which is basically some random meat, onions fried, add some veggies like carrots and celery, paprika, chop potatoes in small cubes and put that in, add rice and then water.
Spices depend, can be thyme and things like that, can be those Indian' mixes. A tad of a hot pepper as well in there, but just a tad. If I add tomatoes then some sugar is needed to counter it's sourness.
Trick for potatoes is to put them in an icy cold water, saw that from a French chef named Reymond Blanc, long story short it releases some stuff and makes the dish connect better.
But yeah, fry it till it dries out, usually takes a bit more since potatoes take a bit and may need to add some water but this is hella nutritious. For meat I usually use a bit of bacon and some chicken breast. If something is a bit smoked then that's a plus.
I like diverse food and while this is an open recipe and you can basically add anything you like in there and it will likely work - it's a joy to eat. For a water I usually use chicken stock or whatever I've got.
Last time I've made it I've had some pineapple juice and that was in as well, ofc added it during the frying process so it got reduced. Tasted awesome.
Zucchini goes in so well, any local veggies would do for a mix as long as onions, potatoes and rice are in to make that solid foundation.
This can also be baked, just fry the onions and shove everything in an oven. In that case, boiled eggs in there are amazing.
It's tasty as fuck, easy on the stomach, cheap and has a lot of nutrients. Started making this in my student days, didn't stop since.

I don't have a specific type of nachos I prefer, but I've tried a few.
Other than that I love a good lasagna, can't make it myself as I am a bad cook. But love my moms
