The roman influance was mostly about spices, breeding, meat etc. But this was only during the Frankish era. And it wasnt even France yet. (For this, again, you need an history book).
But the french actually made it evolve in a greater way than before, obviously, from the middle ages, the Sun King, the french revolution, and again the regional cuisine.
