Personally one of my favorites is pasta with veggies and tomato sauce - you just stir fry veggies of your choice (I usually go for 1 red bell pepper, 1 zucchini, 1 eggplant, and garlic), add pasta and tomato sauce like pomodoro or something, then spice it up with salt, cayenne pepper, paprika, oregano etc., add some cheese if you want like parmesan or grana padano, and this is it

get a deep baking tray
fill the bottom with sliced potatoes around 2cm thick
put sliced onions on top of that
put chicken over that
put some olive oil over everything and season it with salt, pepper, rosemary and thyme
if you want you can add some beer you like for deeper flavor
bake for around 40 min, then turn the chicken around and keep cooking until the chicken is done and the potatoes are soft

Rice is generally easy to prepare and you can add veggies to rice to cook at the same time
most rice varieties cook the same way so you can get the rice you like the most
For veggies your options are
bake: mix veggies with oil and seasoning and bake in oven or air fryer
steam: self explanatory
fry: in pan with oil and seasoning
For meats depending on the cut:
bone: stew with veggies and seasoning
meat: fry or bake
seasoning to consider: salt, pepper, basil, thyme, Mexican seasoning, garlic powder whatever you have or like
